Can't help with comparisons on jailbreak vs non, but if you have the SIM card out then you are not pinging the cell towers and thus your iPhone is in airplane mode and nothing but an iPod. No cell network or wifi will allow the battery to last much longer.

I would say that your jailbroken phone is not optimized for the T-M network and id trying extra hard to stay connected. Could that be? It certainly makes a difference on any phone if you have a good cell signal or not.
