This is exactly the right track. When you connect to Server1 from the outside, it's going to connect to itself if it hosts your mailbox. If Server2 hosts your mailbox, it's going to forward your request along. If they both have a CAS (Client Access) role, then there would need to be a public DNS entry and some sort of NATed access to Server2 as well for the request to be handed off to. If it's trying to just pass you the internal name for Server2, you're never going to connect to it from outside the firewall. Find out what happens with OWA in the same scenario first since you can monitor that more easily.
